It was hot last week.
No, that’s not right. It was hot.
We waited until the very last possible moment to turn on the AC but when it hit 91 inside the house on Friday with a forecast of 103 the next day, we broke down and turned it on. I’m not a fan of AC. I think it feels sterile and dry. I enjoy sweating and feeling hot. But seriously … enough was enough. Our thermostat is set to 80, which is perfect. I can still wear summer clothes and be comfortable. I just don’t see the point of dropping the temperature so low that you’re shivering and need to bundle up.
It’s summer. Let’s enjoy it, shall we?
I love my beer. You all know that. But sometimes I need something a little different. I started thinking how the heat on Friday reminded me of being in St. Lucia. That beautiful gem of an island filled with beautiful people who make a beautiful rum punch. We drank a lot of rum punch while there, it’s just like our glasses would magically fill again when we hit half-full.
It’s a land of magic and wonder, I tell you.
I have Bacardi Limón and Triple Sec in the cabinet … make that had Bacardi Limón … I used it all to make my rum punch.
We never have fruit punch in the house but we always have grape, apple, orange, and/or pineapple juice. I made my own version of a rum punch using apple and pineapple juice. It turned out wonderfully! I’ll definitely make this again. Serve with ice cubes and a couple cubes of watermelon, and you have yourself a refreshing and pretty afternoon drink.
Apple Rum Punch
1 c. Bacardi Limón
4 c. ginger ale
2 c. apple juice
2 c. pineapple juice
Mix all ingredients in a pitcher and you’re ready to go! It couldn’t be simpler. Toss some fresh fruit in the pitcher for color and pour over ice in glasses to serve. I think this would taste good with white grape juice too. Yum!
