I had some lettuce in the fridge that I wanted to use before it went bad. There was a can of wild salmon in the pantry, leftover tzatziki sauce from the previous day’s Greek nachos, feta, and fresh cherry tomatoes. I drained the salmon and added some tzatziki until it was nice and creamy without being soggy. It gave a nice tangy, citrusy flavor to the mild salmon. I also added black truffle sea salt, some smoky meat rub, crumbled bacon, and lightly cooked chopped onion. I spooned some extra tzatziki on top of the greens, drizzled some olive oil on and added everything else you see there.
